ZucchiniMuffins

Goodmorning! While strolling in my favorite farmers market I saw some beautiful zucchini's that were calling my name. My first thought was to make bread but that idea came to a halt when I realised I loaned out my only two loaf pans. So I decided to make some muffins...perfect portion control anyways. Here's my little recipe.....turned out extremely amazing!


Ingredients
3 cups grated fresh zucchini
2/3 cup canola oil ( butter can be used but I don't)
2/3 Agave Nectar (1 1/3 sugar if you like that instead)
2 eggs, beaten
2 1/2 teaspoons vanilla
2 teaspoons baking soda
Pinch salt
3 cups whole wheat flour (or all-purpose flour)
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 cup walnuts (chopped)


Oven: 350 degrees....for 25 minutes. When you use Agave do 325 for 30 minutes.
Let them cool for a hour...if you can wait :)
I warm mine up in the morning and add a spray of cbitsnot butter.
Yummmmm!!
