Breakfast Trends: Baked Oatmeal

This Breakfast Trends post is about starting a trend. Last week I stumbled upon Foods of April, a food blog, and fell in love with one of her recipes! I thought.."wow this could become a huge thing in the foodie world"...then I thought.."wait, why hasn't it already? ".

Well I'm here today today to introduce you to Baked Pumpkin Oatmeal. Say it with me..baked..pumpkin..oatmeal...sounds yummy right?
It's so simple and delicious that I had to do my own spin on the original recipe.

Baked Pumpkin with Cranberry Oatmeal:

1 cup Oats
1/2 cup Oat Bran
1 1/2 Unsweetened vanilla hemp milk
1/4 cup Liquid Egg Whites
3/4 cup Pumpkin Puree
1 tbsp Cinnamon
1 tbsp Ginger
1 tsp Nutmeg
1/2 tsp Cloves
1 tsp Baking Powder
4 tsp Palm Sugar
1 tbsp Walnut
2 tbsp Apple Sweetened Cranberries

Preheat oven to 350 degrees. Spray bottom of baking pie pan with nonstick cooking spray and flour. Mix all ingredients together except cranberries and walnuts Pour mixture into baking pan and top with cranberries, walnuts and extra spices. Bake for 45 minutes until cooked thoroughly.
Tip: Make it the day before so in the morning its already made and it just needs to be warmed. Before eating top with agave nectar and cinnamon!

Start baking your oatmeal girls...overnight oats are so last week :)

  3. Oh man, im thinking i might just double the recipe of this bad boy and make some cookies. Im gonna have to replace the egg whites with some egg replacer but other than that i am super psyched.

    I'm gonna say the next trend will definiitely be pancakes... but then again, im bias.

  6. love this! i was looking through baked oatmeal recipes a few days ago, and saved a bunch of recipes and ideas...
    but this one sounds amazing, and so perfect for the season, sounds like a delicious and healthy way to eat a pumpkin pie ish thing for breakfast, and i agree totally overnight oats are so last week :P lol you are the cutest and best breakfast blogger ever ;)
    i think this years breakfast trend will definitely be baked oatmeal, and Veggie girl ha yes i think sweet potatoes are also in store for us as a breakfast trend this year :)

  8. genus! great recipe lovie! such a creative idea, and so perfect for the season and a great new way to eat oats :) ive pan "fried" my oatmeal once or twice, but i have always wanted to bake it!

    i agree overnight oats are so last week ;) hehe.

    next new brekkie trend hmm..this!! :) and ohh my dad is giving me his brulee torch so i am def going to brulee the top of oats with sugar and make a 'creme brulee' oatmeal with dried fruit etc..! should be good. :)
