Sweet Yam with Raw Almond Butter and French Egg Omelet
How's that for color? Breakfast this morning compensates for the lack of sun for the past few days...it has been cold and gloomy. If only I had some vegan marshmellow fluff for the yam I'd die happy!!
I've been rereading everyone's comments and I truely thank you for such sweet words. I know life has its ups and downs so I know things will get better in time. I'm not one to throw in the towel...very much a fighter :)
Yesterday I went to Costco to pick up a tub of huge medjool dates and Fage yogurt...that there is bliss. Eventhough my fridge contains overnight oats, half cartoon of coconut milk and a huge box of sweet potatoes..atleast I can live off some sugar and protein, right? I promise my foods will be more creative once I move, trust me ;)
How's everyone's Friday going so far? xoxo

You better NOT throw in the towel - you're better than that, my dear friend xoxo

Wow that yam-scoopage looks delicious! Almost like big dollops of orange ice cream. Delicious! Did you just steam the potatoes?
