On to the good stuff...This weekend I was in a dire need of chocolate!! After going through my dark dungeon of a pantry I found Ghirardelli cocoa powder and applesauce so I looked around for recipes and knew exactly what to make. I decided to make my own spin on this recipe. After putting it together and placing it in the oven I read the recipe again and noticed the complaints some left on the website about the consistency. After it baked I noticed it came out more of a cake then a fudge brownie. Oh well....I'm not complaining :) Here's the my take on the original recipe, enjoy!
Vegan Double Chocolate Brown-Cakes
(Half brownie half cake)
- 1 cup Unsweetened Applesauce (you could add pumpkin instead!!)
- 1/4 cup Evaporated Cane Sugar
- 1/4 cup Palm Sugar (optional)
- 3/4 cup WW Pastry Flour
- 1/3 cup Ghirardelli Cocoa Powder
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 Tsp Salt
- 1/2 cup Vegan Chocolate Chips
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon (or pumpkin pie spices if using pumpkin)
- Dash of Cayenne ;)
Preheat oven to 350 degrees. In a bowl mix together applesauce, sugar, vanilla. In another bowl mix together flour, cocoa, baking power/soda, salt and cinnamon. In the middle of the dry ingredients add the applesauce mixture and fold. Lightly combine then add chocolate chips. Spread into a well oiled baking pan, I used a pie pan, then bake for 25-30 minutes. Eat promptly out of hot pan, burn your fingers and devourer with warm drizzled almond butter. Mmmmm, How else would you eat it? I'm not shy to say that I licked the bowl clean and made myself a big slice! Guess whats going on the oats this week!

I have some food reviews to do today and another Tarjay run...thank goodness life has little bright spots, right? I have to be honest, I haven't been doing very well in spirits. I've felt really down lately due to personal problems but I'm really trying to stay motivated and not relapse into bad eating habits because of the stress I'm under. I've defiantly learned from my mistakes that it only makes life worst on me in the long run. Last night I watched Amazing Race with my sibling, ate a brownie and gave myself a homemade oatmeal egg white facial. It felt really calming to just detach from the computer and spend time doing some of my favorite things. Sometimes I really need to take time to relax and enjoy the little things instead of focusing on the big things I can't change in my life right now. I guess its a good reminder for everyone. xoxo Maggie
