English Raspberry Tart Oats with Shredded Wheat
Hey everyone! I'm so glad you enjoyed the blog swap between Katharina and I! As you've seen on her blog, I started yesterday off with a bowl of English Raspberry Tart Oats. It actually tasted like one of those powder sugar thumb print cookies they serve with tea. Glorious! After breakfast I went to the gym for a little strength training then got dressed to go thrifting. Something about fall makes me want to wear nothing but neutrals, rustic florals and brown leather boots, thankful I scored on each level. I know funds are low but I sold my old guitar this weekend and thought that it was time to add a bit to the wardrobe. Correct me if I'm wrong but I feel wearing old high school clothes holds me back one from embracing this new chapter of my adult life, more about that in another post later.
After a bit of shopping I went to the local Whole Foods to pick up some free Sunshine Burgers with a few coupons they sent me. The cashier was shocked and asked me how I got these "tickets of gold", I replied that I blog about food and do reviews sometimes. She said "So basically you write about eating and you get free food?" I tried to explain the concept but we both just laughed and I went on my way. I was so excited to get home and make dinner because from her reaction about the burgers I knew I was in for a treat tonight!
But before I got to dinner..I needed lunch! I sat down in a tiny booth upstairs and ate leftover sweet potatoes and a lemon chickpea salad that I brought from home. Maybe leaving my lunch in the car for a few hours before eating it was a bad idea..it tasted like plastic blah! I ended up grabbing a soy chai to go and drank that instead. Obviously that did not cut it because the time I got home I was starving!

I snacked on a "yogurt mess" of half vanilla half plain Oiko mixed with a honey crisp apple and doused in cinnamon. This is my last yogurt container from Oiko and I have to admit I have been converted...organic yogurt is the way to go! I always thought it wasn't worth the price but the flavor and the health benefits are too good to ignore. Honestly I rather cut back on my Lara bar spending and make my own then eat any yogurt other then organic. Yes I licked the bowl clean! So delicious! I saved a tiny bit for the next morning's breakfast :)
While packing up all my clothes from my closet I pulled all my shoes from the dark corners and put them on the empty bookshelf just to see what I had.....umm Houston..we have a problem!

I've been moving so much this year that I kept things boxed up and I really didn't know what I had until now. Nice excuse, eh? I am either oblivious to the fact of past purchases or I have a serious problem...I'll leave that up for interpretation :) All I know is after seeing this picture I quickly put together a few bags of shoes/clothes to sell and some to giveaway!
In between boxing up cherished scarp books and collage bird cards I managed to "get krazy" with some kabocha. I baked one half with coconut oil and cinnamon and the other in olive oil and cracked pepper.
While that was getting all toasty I took Lu outside for a play date with our outdoor cat, Max.

Lu seems to think shes a cat and can pounce on whoever she chooses. Max puts up with it....obviously they are "BFF Jills". lolol.

Lu says: "What did I do?"
After thirty minutes or so the house smelled heavenly and it lured me into the kitchen to start getting creative. I've saved several recipes for the kabocha and was a bit divided but when in doubt I keep it really simple. The star of the show? The herb Sunshine burger of course!

Sauteed Lemon Kale with Roasted Red Pepper and Crumbled Herb Sunshine Burger on a bed of Mashed Cayenne Kabocha Squash
Wow, I'm not going to lie, these are to die for! The simple ingredient list sold me at first but the flavor has made me serious fan. The only time I've tasted a veggie burger this tasty was at Whole Foods a year ago when they made fresh quinoa spinach patties. I loved light they were, no soy, no greece, just a pleathra of flavor and texture. I could taste every ingredient! Only downfall was the box comes with only three and the price was a little intense, but defiantly worth the cost if you are on a soy free, gluten free diet or your looking to treat yourself. Must try the breakfast patties next!
I know this post was a bit random but I have a million things going on and I just wanted to catch up a bit! xoxo Maggie
