Having my cake


Acai Vanilla Cake Oats
Wow I totally need to gush right now about this bowl of oats! I first cooked the oat bran with vanilla, almond extract and whipped banana. In another bowl I swirled in some vanilla Oiko's greek yogurt with acai powder until a rosey pink color appeared. Once the oats where all fluffy I mixed them with the acai yogurt mixture and folded in vanilla pomegranate cashews, cinnamon and topped it off with more banana slices and sprinkles.

Holy yum! It was like having funfetti cake for breakfast! By far the vanilla yogurt is my favorite of all the flavors...it is rich, creamy and tastes like actual vanilla. My vanilla bean cravings were finally met! As for the acai powder, it was a whim that I threw it into the mix but I'm sure glad I did. It added a level of flavor that made the oats fruity without being overpowering. I must make this again.

Speaking of funfetti, last night I found an extra box of the cake mix from my old cake decorating classes. I think making funfetti woopie pies are in order....hmmm

After a bit of blog reading I finished the morning off with a cup of Organic Green Tea.

On top of all the packing, I'm having a moving sale today. Ahhh people are already showing up and I'm still blogging. Currently loading up on sugar, caffeine and unmentionable amounts of dairy. Lets not go there :) Have a great Saturday! What your current favorite oat creation?

  1. I think the sprinkles tie it all together :) Very oats lately have to be the oh-so-popular Pumpkin & Maple, I just have gotten tired of them yet!

  3. I thought it was your birthday with the way those oats were looking! My current fave is apple rhubarb crumble. Something as simple as a little applesauce cooked in the oats with a chopped apple and some frozen rhubard with a few grahams sprinkled over the top.

    Either that or banana bread (but i love banana anything!)

  4. Almond extract + Banana...good idea.

    But I remember putting TOO much almond extract the last I made Chocolate-Almond Oatmeal...still a little sick from this xD

  5. love the sprinkles! :) you are too cute, and that bowl is the prettiest bowl of oats i have seen in a while! i must get those pom cashews, i saw them the other day, but i got the pistachios instead which are amazing :)
    my favorite oat creation hmmm hard question NOT lol...easiest question EVER ha... my recent fav oat creation well i am loving steel cut oats made with Hemp milk, banana, dates and lots of walnuts or pecans and molasses and ginger, and unsweetened carob powered, it seriously tastes like a carob or chocolate ginger bread :)

  6. ooohh! i am in love with ur oats. <3 the oikos vanilla mixture mixed in...BRILLIANT! must try something like that. i want to get sprinkles and ricemellow fluff for oats and make a raw whip cream for oats too hehe..why not? it would be so yummy! :)

    oats of the moment: creamy hemp milk oats (ive been loving mixing 1/4 multi grain and 1/4 old fashioned oats) with a banana cooked in. topped with loads (2x lol) of chopped toasted peanuts, crystallized ginger, dash of cinnamon,more ginger, and some raisins! love p-nuts and ginger!
