WDME: October Ninth Part Two

After a bit of working, cleaning and catching up to my favorite blogs I decided to go play fetch with Lulu. But before I went out I ate a snack and planned dinner...

I snacked on Sahale Snack's Soledad Almonds. They are really interesting to say the least! I'm a huge fan of the spicy sweet combination as of lately so the dates and cayenne on these almonds was amazing. I really did not expect the bite of red pepper at the end either. I'm planning on putting them into a dish soon, ideas? I also snacked on a Honey Crisp Apple the size of Lulu's head...no seriously..it was massive!Simple enough, I have held on to a magazine page for a while so I knew exactly what to make for dinner.

I folded and layered out clothes to dry.

Then I got bundled up and went out to play a bit with the pup.

One hour later of playing fetch I was ready for a warm and eat a hot meal. After a long shower, hair in bun and the proper Pink sweat pant attire I was prepared to cook. How else would I spend my Friday night?

Butternut Squash Cranberry with a side of Baked Tofu and Spinach Sun Dried Tomato Ricotta


I put a spin the original recipe and thought I'd share, enjoy!
Butternut Squash, Parsnips and Yams with Cranberries and Walnuts:
  • 1 Container of pre-cut parsnips, butternut squash, yam cubes from Trader Joe's
  • 1/4 cup Walnut Halves
  • 1/4 cup Dried Cranberries
  • 1 tbs Orange Blossom Honey
  • 1 tbs Orange Juice
  • 1/2 tbs Coconut Oil
  • 1/2 tsp Cranberry Juice
  • 1/2 tsp Apple Cider Vinegar (optional)
  • 1 tsp Sea Salt

Steam vegetables until cooked through but not mushy. Then toss the veggies into a serving bowl with walnuts, cranberries and sea salt. In a separate bowl whisk together honey, oj, oil, cranberry juice and vinegar. Drizzle the honey juice mixture over the squash, parsnips. Top with a pinch of sea salt and cilantro. You bet I'm having leftovers tomorrow!

I also wanted to ask everyone what you would like to see more of on the blog. Lately I've done different types of posts to give variety and to keep My Breakfast Blog not only blog of my morning muses but more importantly a daily blog of my life. So any ideas?     love those almonds, i have their pbj amonds, but i once put my trader joes chili lime cashews in a stir fry with brown rice, edaname, carrot and tofu, soo good, asian sauce, and just like 2 tbsp of the nuts thrown in!
    that dinner looks amazing! definalty making that! looks right up my ally!

    those almonds look so delicious, i have the pbj ones with almonds, peanuts and berries in it, love them, but these look amazing, i must get them :) dates and cayenne yum!
    love your recipe, i am def making this soon, i made a similar dish last night with sweet potaoto, veggies, and pistachio nuts, but i love your recipe girly!
