Whatever floats your boat

What a day! I ended up selling some old clothes, shoes and a game cube, which helps lessens the load of packing. While working outside, can we call it working...more like waiting, I did find the time to make something I've been dying to try for a while....



Pumpkin and Black Bean Quesadilla
Making this little tasty thing was so simple, I'm surprised I never tried it before. While the sprouted seed tortilla was warming up in a pan I mixed together pumpkin puree and salsa. In another bowl I mixed together warm black beans, celentro and red onions. In a pan I sprinkled veggie cheese on one side of my tortilla and then topped with black beans, pumpkin salsa and more cheese. I folded the other side and allowed to cook on each side for two minutes. I topped mine with more pumpkin salsa and black beans. So savory..I'm already craving another one! I thought this tortilla would be very tough like Ezekiel's sprouted ones are but it was very soft and reminded me of a regular tortilla but full of flavor. I was very surprised since it made the quesadilla the perfect texture! I would imagine it would be even more tasty with a roasted pepper salsa. What doesn't pumpkin go with?

For dinner my options were very limited but I put together something that turned out fantastic!

Zucchini Ricotta Balsamic Boat with Grilled Korean Spicy Tofu
What does a girl do when her veggie resources are low and her fridge is full of leftovers? She stuffs a zucchini of course! I threw a bit of spinach,a half empty container of ricotta and two sun dried tomatoes in a food processor. I topped mine off with veggie cheese and balsamic vinegar. I also dived into some leftover tofu..Korean spicy tofu, you can never go wrong with those flavors. I love stuffing vegetables, I think it goes with the season, no? Anyone have a great stuffed acorn squash recipe? Please share!

  5. So, I was thinking oats for breakfast... But now I want an eggplant sandwich real bad... With ricotta.

    Acorn squash, hulled out and roasted... Stuff it with black means, rice and salsa. Top with cheez and bake for fifteen at 350. I've never made itbut it sound good to me.

  7. yum! i must try that quesadilla. i think the answer to your pumpkin question would be, um, nothing. :)

    stuffed acorn squashes are amazing - a favorite stuffing of mine is quinoa, fresh cranberries, chickpeas, sage, and a little agave. mm.

  9. Oh my gosh girl! These are great!! I have a recipe for pumpkin and black bean enchiladas with mole sauce, and your creation reminded me of that. Have you tried sweet potato with black beans? I bought ricotta cheese today so I want to try pureeing it with something like you did :)
