Pesky Persimmons





Cinnamon Swirl French Toast stuffed with Persimmons and a White Chocolate Spinach Shake

Persimmons....persimmons...I really tried to give them a chance. I picked some up at my local farmer's market after seeing so many photos of them lately. I tried them plain, I tried them with sweet things and with savory. I even tried them topped with herb goat cheese but nope nope..just not my cup of tea I suppose. Just a tad too dense..too sweet..too confusing. But I know I probably alone on this since so many people find them to be nature's candy...as for me..I'll stick to bananas and apples :)

This morning I made french toast using up some of the cinnamon swirl bread I bought at Trader Joe's last week. Reading Katharina's truth a few days ago made me realize I too rely for the most part on fresh produce. I often center all my meals around what is the healthiest choice, fruits and veggies, instead of venturing into my pantry. Not saying my pantry is full of unhealthy things but not fresh. This week I really want to try focusing on making a dent in my food supply. I already have my eye on some nori sheets and a bag of penne pasta behind all the dried fruit that has taken over all the shelf space...ideas? Today is going to be a bit hectic at first but later I plan on finishing up decorating my room so that will be enjoyable. I'm really excited actually about this month because I printed out a bunch of recipes I'm planning on making. A few are vegan cinnamon rolls,a dish of sweet potatoes and tahini,"fried" bananas and chickpea fig-tagine. Oh and can not forget what I'm making tonight...tahini falafels with hummus!

To continue with Truth Week...

Truth: I've ate a sweet potato or yam every day for the past month. Once I find something I love its really hard for me to want anything else. Yes...I have that "problem" too :) Lately a warm yam with sunflower butter has accompanied every lunch for the past two weeks. A while ago I bought a massive box of yams at Costco so I've been trying to eat those up while buying ungodly amounts of kabocha and sweet potatoes on the side. I'm probably trying to make up for all the fall seasons that I never ate them in the past ;)
When you find something you love is it hard for you to want anything else?

  1. I've been eating kabocha almost night as dessert for the past X months or years! I'm soooo hooked! :)

  2. Gorgeous gorgeous! I'm the same way, I stick to something if I love it. I've had Kashi Strawberry Fields everyday for a while in some form..whether it be breakfast, snack, a topping, you name it. I love the stuff!

    I've never tried a persimmon!

  3. i am the same once i eat something its hard for me to switch it up, like oatmeal ha...or a lara almost everyday, and KAMBOCHA! heheh, i have ate it like every day for the past 3 weeks probs? yeah...
    ha..we are going to turn into little baby kambochas lol..

    love that pic of the lara! and sorry u dint like the persimmon hehe, my mom doesnt like them and i was weary at first, but then i got a good one that was perfect! everyone has such different tastes its so interesting...
    but besides that your breekie looks to die for! white chocolate spinach shake! ohhyum! (white choc. wonderful pb? or wc chips? :) ?

    well lovely french toast my dear, and white chocolate spinach shake i need this recipe! :) is it with white chocolate wonderful Pb?
    anyways...hmmm what was i going to say, oh yes, sweet tater/yams/kabocha eat it all you want girly its so healthy and i think when we all get in a food rut, it doesnt matter as long as it is healthy, you love it and enjoy it and it is nourishing! and its the fall, so why not, sooner than later all these things will be out of season!

    and love your ideas for this week, loved Katharina's post too, her truth story i could relate so much...
    hmmm nori rolls, you could make yam, or sweet potato sushi rolls? with avocado and like pickled ginger etc idk... and love the idea of the chickpea fig tagine i am making that tonight! :)

  6. yes, i am the same way, and i also love sweet potatoes but lately i have been trying to mix it up with other root vegetables, lol. also tofu lately, i always want tofu, weird i suppose but i'm on a streak.

  7. I'm the same way: once I make something delicious (sweet potato fries, oats, etc) I make it over and over until I run out of that ingredient. I don't seem to get sick of it but a change is always surprisingly nice.

  8. To everyone that asked I used white chocolate chips. I suppose yogurt chips would be a nice addition too. The recipe is quiet simple but if anyone wants I will post it.

  9. Lol I can read your blog again! I seriously had to refrain from looking at food blogs because I was so jealous.. basil green with envy ;) of everyone's yummy vegetables and fruits. Raisins aren't bad but... there are so many more things out there!! I've been having toast for breakfast - and why have I not made French toast. Okay minus the time factor.. I think Sunday I will make French toast :D

    You know what's funny? I found sheets of Laver seaweed and I was like.. hey this is better than nothing! You should just make rice and make little rolls. You don't even have to thinly slice any veggies.. that would be cool if you made various toppings :D Like a fusion of concepts of different ways of eating. I like to do that a lot. Play around with how different foods are traditionally eaten ;) I hope you have a wonderful wonderful Friday! Cheer up buttercup <3

    Yay for french toast! French toast might be one of my favorite breakfasts to order out. Love the things restaurants and cafes come up with. Yours looks mighty good.

    My junior year of highschool I ate the same exact thing for lunch everyday, even though it was time consuming to make. Let's just say, senior year, I didn't make it, once. Burnt out! I do that with a lot of food items.

  11. Your french toast looks delicious. I can't remember the last time I made myself some... that's not good! I, too, am not the greatest persimmon advocate. I find them odd.


    I eat ALMOST the same thing for breakfast everyday, but no matter what, I HAVE to have a banana incorporated into it! and lunch ALWAYS has an apple and far too many carrots...

    but honestly, yams, sweet taters and kabocha are far too good to go without on a daily basis :)

  14. I'm the same way with bnut squash, sweet potatoes and kabocha. I have to have a serving everday, and about a 1/2 pound of carrots. My skin is gloriously orange.

  16. Beautiful pictures. :) Ehhh, I love persimmons, so I'm basically drooling over your breakfast. Have you ever tried dried persimmons? They're delicious, IMO--really fleshy and soft on the inside. I'd recommend them before you blow off persimmons entirely ;)

    Hmmm, I actually try to change up my eats day to day, but mostly, I just go with what I crave. Which is usually something different every day. :)

  17. I feel you on the yam-love. I ate 3 in a row this week, 3 in a row last week, probably something similar the previous...yeah, they're a staple in my diet. They're so delicious and adapt to so many recipes, how can we root-veggie-loving foodies resist?
