Banana Vanilla Bean Pancakes with Coconut Oil and an Rustic Egg

Good morning and happy weekend everyone! Breakfast this morning was so exciting, why? Because yesterday was my big grocery shopping day and let me tell you...my fridge was completely empty! Seriously eating apple sauce and yogurt as lunch for a week was getting old fast. I need by veggies! After three trips to different markets and fighting off the winter frost from my suede ballet slippers I manged to come home and make the best homemade basil pizza. There is nothing like a warm oven and the smell of tomatoes with garlic on a cold night, what? I'm Italian! Sorry no pictures though...this little working lady was tired after doing mountains of dishes before dinner. Ehh! Enough about last night though, on to breakfast! I completely pulled another crazy moment after I whipped up some pancakes. I put a dash of this and a couple of slices of banana to finish each cake. As I flipped them I remembered....eggs! I forgot to put one in the mix! Oh well, on the side it went and later on top of my pancakes with a drizzle of honey. Does anyone else like egg yolk on their pancakes with syrup? My favorite!


I had the opportunity to try another amazing product this week and it was the new line of whole food fruit bars from ProBar! I've tried the blueberry one and loved it so I was really excited to try my favorite fruit combination...cranberries and raspberries! The Cran-Raspberry Fruition bar was everything I hoped it would be. It reminds me of a larabar in the sense that it uses dates but these seem more decedent. I can totally agree that if fruit leathers and larabars had a child this would be it. So delicious! My favorite part was the bits of chia seeds and the brilliant taste of the raspberries. Move over Cherry...there is a new love on the loose!

Don't fret if you didn't win this giveaway because two amazing ones are coming up this month! Oh and yesterday my breakfast was a bowl of mashed banana old fashion oats infused with a bit of eggnog and topped with raisins. I also had a side of kamut toast with apple sauce that was blended with coconut oil and topped with a dash of cinnamon. Great guesses everyone! Have a great Saturday...hopefully it's not as freezing as mine! xoxo

  3. Ok so the Banana Vanilla Bean Pancakes with Coconut Oil...OMG divine sounding! I am gluten and egg free (vegan) due to a million food allergies first and foremost but back in the day I used to LOVE eggs with maple syrup all over them. And of course the way you made that egg is so awesome looking. And the Fruition Bar...I hosted a Give Away for a dozen of those, strawb and blueberry flaves about 2 mos ago and yes, those things are good. I bet the cranb would rock too!
