More Time

Happy Saturday! Quite a late post but rest assured I come to deliver some drool worthy photos. Lately sleeping in has not been an option, my body insists on going to bed at nine and promptly waking at six. Blame it on time change or that my mind has been racing with creativity as of lately. Or it could just be that its nearing the end of the year and I'm too excited for 2010..whatever the cause I'm loving my early mornings. More time means breakfast can be less planned and more spontaneous....



Salted SourOat Bread with Egg Whites and Sunbutter. With a cup of Greek Yogurt, Honey and Strawberries doused in Cinnamon.
Sour, tart and sweet all are complimented perfectly with the Sunbutter. I love meals that have a mix of everything, and almond butter who? Sunflower butter has taken it's breakfast spot for sure! Anyone have a good sunflower butter sauce recipe? I would like to drizzle some on my broccoli for dinner tonight. Yes I said broccoli :)

Having more time to do laundry in the morning means more time for snacks. Onion "fruit" bowls can be made and pure spinach shakes can be blended. Not to mention amazing vegan products can be reviewed.



Straight Up Spinach Smoothie and Cranberry Heart Thrive Cake
So glad I did not give up hope..these cranberry thrive cakes are to die for! I imagine they would be dessert worthy dipped in some chocolate hazelnut butter. Oh yes, I went there!

Did someone say chocolate? Having more time to get lost in my pantry I can find things I didn't know existed...like half of an Bountiful Vegan Choco Choco-Chip Cookie.

Goat Cheese Lentil Stuffed Collards

After my sister told me about some stuffed grape leaves with goat cheese she had that were life changing last night I knew I had to make my own. I'm not one to write recipes since I often do not measure my ingredients but I put together one to share this time. It was too good not to write down for future recreations! Click here. I decided to use green lentils instead of chickpeas and am I glad I did! You can also veganize it with some flavorful "Pizza Cheeze"!

Right now I'm snacking on a yogurt mess of pumpkin granola and playing scrabble in front of the fire so I best be going. Have a great weekend everyone and please look forward to Monday, there will be a guest post! xoxo

  2. broccoli and sun butter sounds amazing, you have inspired my dinner ;) and a sauce, usually when i make a sauce out of a nut butter, i take some lime juice and a bit of warm water and kinda just thin it out a bit, you could probably add like a bit of soy sauce? idk...hmmm but it usually comes out great :)

    and ahhh that banana with the cookie looks ridiculously amazingly delicious!!!! so does everything, that goat cheese lentil stuffed collard, sounds and looks to die for, i am def making that soon, great recipe! and love grape leafs, forgot all about those! haha, use to have them all the time at greek restaurants, sooo good :)

  3. i had the cranberry heart thrive 2 days ago hehe:) yummm and i have the chocolate one(finally found him at my co-op!! ;) waiting!) and omg genus idea with the banana and vegan cookie! i am so doing that! "banana split"!!!!!

    those grape leaves your sister had sound so good! and your dish looks/sounds just perfectly amazing!

    sunflower butter on broccoli sounds so good! usually when i make a nut butter sauce for savory dishes like over rice...i just take some N.Butter and dilute it with a tad of warm h20 and a squeeze of lemon or lime.. cumin curry and ginger spices and s+p! and there u have a savory sauce!
    hmm..inspired my dinner! :)

  10. Broccoli with nut butters tastes fantastic! I have never had sunflower butter, however... I'd like a good recipe as well! That sounds delish. I've only ever had Almond and Peanut Butter :( Booo.

    Your banana split and breakfast look "yumlicious". Really. I have a vegan cookie in my pantry so I think I am going to borrow that idea. You are so creative with your food. It seems like you know what to pair together so well.
    It makes me so happy that you are enjoying your early morning and living more spontaneous and in the moment.
    It is lovely, isn't it?

    I'm telling you what Maggie- your breakfast eats+amazing photography skills pretty much some up my obsession with food. If I could eat breakfast and take pictures about it,and make a living, that is what I'd be doing with my life. :)
