
While practicing my warm ups on the barre at ballet class I had a surprising craving for a cottage style pancake. And the first thing that pops into mind is oatmeal honey cakes with warm berries. Being the o'natural cook and all, I wanted to make them healthy. A ballerina's got to eat :)
Simple enough...when I woke up this morning I rushed to the kitchen to meet a warm fire and a mixing bowl.
My little oatmeal honey hotcake recipe...
(This makes one serving..one big hotcake..or two small ones)1 Whole Egg
3 Egg Whites
1/2 Cup Oatmeal
A Drizzle of honey
Mix together lightly.
(Perfect carb, protein and fruit ratio..the honey is optional)You must build the pancake on the warm pan on the stove top, I use a crepe pan, making it into a round hotcake. Simple enough! Warm up berries either on stove top or microwave. Then adorne your lovely oat cake with a drizzle of honey and some berries. I love mine with a rice milk latte!
