Coconut Indian Rice n' Oat Pudding




Coconut Indian Rice n' Oat Pudding mixed with Cardamom Sweetened Cashews. Topped with a crumbled Chocolate Coconut Macaroon. Inspired by Sophie's idea of a "Rice Pudding".

Before I start to gush on this breakfast I must admit my little hobby. The reason why I'm always a tad late on posting is that I adore watching this lovely lady. Probably the only chef that understands the brilliant connection imagination, elegance and beauty has to food. I love the way she speaks about ingredients! If you haven't heard of her please watch some of her tapings..so amazing!

Last night before I went to bed I packaged up the last of the leftover balsamic rice and put it in the fridge. My eyes some how meant up with a single can of coconut milk on the top shelf. I was suddenly struck with the stellar thought of making an Indian pudding. Being that Sophie requested some type of rice dish I knew it was meant to be! Now before you think about how fussy some recipes can be, let me reassure you, if you have leftover rice it only takes minutes. And trust me its truly worth the time. Here's my little breakfast spend on a splendid international dessert..

Coconut Indian Rice n' Oat Pudding
(1 serving)
1/4 cup Balsamic Rice, precooked
1/4 cup Oat Bran
1 cup Water
1/2 cup Coconut Milk, lite
1 Mashed Banana (used as a thickener and sugar)
1/4 tsp Cardamom
1 tbsp Flame Raisins (optional)
1 tbsp Cardamon sweetened Cashews, Pistachios would work nicely too (optional)
1 Chocolate Coconut Macaroon

Over medium heat in a sauce pan bring water to boil. When boiling pour in oat bran and allow to cook. Lower heat to medium-low. When it looks a tad dry add balsamic rice and coconut milk and cardamom. Lower heat to low and keep mixing. Add pre mashed banana and fold. You could add sugar or agave if desired. Allow to cook on simmer for 2 minutes then add cashews and raisins. Put top on pan, turn off heat and allow to set. Plate with a coconut macaroon or golden raisins!

Having cardamom anything in the morning takes a special taste bud. So if it's your first time using the spice I would encourage using a light hand when measuring. Very exotic mix of oats and rice but very delicious. Thanks Sophie for the great idea!

Already the weekend? I suppose its time for me to venture out from my warm fireplace and comfy uggs and pick up a waffle maker. I've been meaning for some time to buy my own..maybe an hello kitty one? And I cannot forget the Persian meal I'm making tonight..must get some ingredients! I will take pictures if I remember.   3. ahh Sophie is so smart! that is such a great idea, and looks so delicious, coconut and cardamom are my two favorite flavors, so delicious, and rice pudding is my 2nd fav dessert next to carrot cake ;] i am making this! promise ;] lol...sounds perfect!
    and Nigela, love her as well, i agree she has a lovely way of cooking and talking about food, i used to watch her show all the time! :)

  5. i love this! yum! looks like right up my ally i love rice pudding, i am so gonna make this i swear ;) and love the macaroon! greeeat idea sophe had with the rice pudding and cardamon is like my fav spice! love it in banana oatmeal with dates! and cardamon spiced apple cider, so good! and chai tea of course love the cardamon spice in that!
