Good Grief


Carrot Cake Pancakes Stuffed with Flame Raisins topped with Sweet Cream "Cheese" Spread

Morning loves! Last night was an all nighter..maybe got five hours of sleep? I have a opportunity today to meet with an owner of a vintage retail shop to sell my jewelry line so I had to stay up putting together samples. Thank goodness coconut milk cookie dough ice cream exists, it powered me through the making of two gorgeous necklaces!
Finally around twelve I called it a quits...but sleeping after so much technical work always keeps my mind awake. Besides random dreams of visiting my old English teacher and having a blogger breakfast picnic I managed to piece together a recipe for carrot cake pancakes. By the time I woke up it was obvious what needed to be made.

A few days ago I noticed Eliza made carrot cake oats for dessert week. Being that carrot cake is one of my favorite desserts besides tiramisu, shouldn't that have been apart of dessert week already? Where has my mind been lately! Good grief, alright!

I can't say I didn't munch on handfuls of baby carrots while shredding them into the batter...carrots really are the best vegetable out there. In the batter I also mixed some nutmeg, vanilla, raisins and brown sugar in with the eggs and brown rice flour. A scent of kettle corn filled my place that I'm pretty sure came from the brown sugar but it too was worthy of an "mmm"! They came out a tad dry but the creamy cheese spread I made with Tofutti and agave nectar made them off the charts. A very pleasant way to start the weekend!

So would you like to see the new collection of necklaces...hmmm a sneak preview this weekend is in store but right now I'm keeping it under wraps in case I get the shop deal! Hoping for the best. And I noticed yesterday I forgot to put up my positivity note opps!!
January 09 2010: Learning about the most fear inspiring people who ever lived is worth a lifetime of study. I have my papa's nose, my mother's eyes and my own smile. Pinkberry's dark chocolate yogurt with raspberries can make any horrible day one thousand times better.

Dessert week has ended but hands down whats your favorite dessert?

    OKay on to your magnificent breakfast... can i come over please?? why wasn't i invited to breakfast at Maggie's today >.< lol. they sound/look amazing! love the addition of cream cheese and stuffed raisins! oOmy!! :)
    and carrot cake is my fave dessert, next to creme brulee and french macaroons!!

  4. Your two favorite desserts are my fave! I LOVE tiramisu and carrot cake. Although I'm muuuch picker when it comes to approving if the tiramisu is good or not. A lot of people in that states use whipped cream instead of mascarpone.. which is a big no no! This stinks lol I wanted to submit a dessert breakfast recipe - oh welll!! It was fun while it lasted :D

    p.s. did you make the coconut milk cookie dough?? That sounds like heaven.

  9. OH my goodness, those pancakes look and sound too amazing for words. Carrot cake is one of my alltime favourites :) and I agree that carrots are one of the best veggies - I eat them every day without fail, usually raw.

    I loved your week of desserts. So inspiring! In fact you inspired me to treat myself to a slice of christmas fruit cake :D
