My Kind of Breakfast Burrito


My favorite breakfast as of lately must be crunchy, cold and sweet. Counting my blessings that this cereal delivered all three things and fortunately my cravings were satisfied! But what is that little lovely on the clock plate you ask?

365 Honey Oats and Flakes Cereal with Hemp Milk and an Banana Stuffed Vanilla Cream Burrito with Cinnamon and Sunflower Seed Butter


Yes you heard me correctly, a banana stuffed vanilla cream burrito! My kind of breakfast burrito. A velvety smooth folded vanilla "tortilla" stuffed with the "veggies" of warm bananas, the "sour cream" of whipped cream and "salsa" of sunflower butter. And whats all of that without spice...cinnamon that is!
How did I forget to share this with you all? Seems like I've been dancing around the idea for a bit. Definitely an oldie but a goodie. I suppose I never posted this recipe on the blog because these use to be consumed as an dessert when I needed a sweet treat but also a protein fix. Obviously it was destined to be a part of breakfast! I've tried making them with different fruits, nut butters and my favorite..with raspberry jam and chocolate chips. So much left up to the imagination..sorta like oats! Mmmm. Recipe here!

Sunday night instead of going out for Greek or Indian we decided to try a new place out that was known for their healthy whole wheat vegetarian pizzas and roasted veggie salads...man was I excited! Beyond words, the best goat cheese pizza I've ever had and the roasted harvest salad was to die for. Sadly I brought no camera but I have leftovers to prove it and some gifts my papa surprised me with that night.

Now who has a dad that loves trying new healthy restaurants, shops at 10 pm for coconut ice cream and stocks up my supply of kabochas just because there was only three left and he knew they were going out of season. Mine! Best papa ever! And look at that pizza...drool. Second day thin crust cold pizza is probably up there with my favorite meals ever. Definitely going back!

Without being a downer there are a few things that have been bothering me that I must address. I've been feeling lately that I've gotten into a rut with my food choices and my photography. While I have been spending time with my new shop, I feel my blog and food choices have been getting a little routine. Pancakes one day...cereal the next. Shot on the counter..shot on the wood chopping block. I know its normal but for me I have the time to continue to be more creative, why settle? I kinda miss the days when my creativity was bursting as I awoke every morning rushing to the kitchen. So that being said I really want to try new styles, flavors, textures for breakfast and I'm opening it up to all of you. Everyday I learn something new on all our inspiring blogs. Positivity Note Jan 12 2010: Being called a strong young women was the best compliment I've ever received. I had a flashback of getting french fries and dipping them in chocolate shakes after dance class with my best friend...one day I hope to relive that again. The reality of my upcoming age reminds me of what the task at hand is right now...get healthy!

    so many things to say about this wonderful post! first of all, your brekkie look to die for good, and i am definitly pinky swearing that i am going to make it! ;) b/c I AM IN A RUT!!! lol...lovie i am amazed with your creativity on your blog each day, your words and your food are always always beyond creative, but i know how you feel, i feel like i have the time as well to be more creative with recipes, breakfast choices and my blog and art...but i find i stick to whats safe and comfortable for me, and get in a rut! but you've inspired me and i am going to follow your goal to let my creativity shine more and more!
    by the way that pizza looks amazingly good and you have the best dad EVER! :D that made me so happy to read!

  6. breakfast looked AMAZING. did you make the vanilla tortilla?! HOW?? you must share :] and i can definitely say i'm in a rut too--i barely have time in the morning though before rushing to school so i can only stick to quick things. but hey, if you have the time, go for it! can't wait to see your new creations :]

    That is so sweet of your father. You're really lucky to have that. People aren't usually that thoughtful, but when people surprise you with little things like that.. it just brings a smile that they do remember the little things that make you happy :D Have a wonderful day!!!

    p.s. try looking at some cookbooks. Maybe make an awesome loaf of bread that can create amazing sandwiches with. Make a pesto or some other spread that you can be versatile with. Or pick out a cheese you've been wanting to try and pick out various recipes you find with it - sweet and savoury so there can be a variety :D

  14. maggie, what a lovely breakfast! i'd have to say, that's my kind of breakfast burrito, too. i only wish i could veganize the "tortilla" :(. any ideas? i'm thinking vegan crepes, but no protein fix there. darn. anywhoo, your pictures always look lovely, even if you say you are in a rut. i sympathize with that because i thrive on routines and am definitely in one now. and your dad is the sweetest! especially with the kabocha thing. that's true love right there :).

  15. Mandiee- Just make or buy some vegan crepes and use coconut or soy "yogurt" instead of whipped creme for protein. Or you could always use more nut butter!!

  16. What a fantastic idea of doing a Reader's Request. I am trying to think if I have anything worthy of sending you. All of your breakfasts are always so striking and unbelievable that I fear I mine may not be up to par…hmmm, I think I have something though.

    And you WILL have those french fries dipped in milkshakes one day again. Even if it's squash fries dipped in Keifer….small steps lead us to massive accomplishments! :)
