Roasted Nutmeg Seasoned Pears Stuffed Vanilla Egg White Burrito. With a side of Cinnamon Riped Toasted Tortilla Pieces and White Chocolate Peanut Butter.
To kick of reader's choice week I made a little thank you breakfast to all of you. So thank you! Is it possible that it tasted better than it looked? Yes! Roasting pears is worth the extra few minutes...always warms up the kitchen and my heart :) I put together a bit of a recipe for each day this week so you too can make these fantastic breakfasts. All very simple and I believe everyone has something like these ingredients at home. Let me know how it worked out!
Roasted Pears:
1 Pear sliced thinly
1/8 tsp Nutmeg
1/8 tsp Cinnamon
Small pinch of Cloves
1 tsp Sugar
1/2 tbsp EV Coconut Oil, melted
On a nonstick cookie sheet drizzle a bit of coconut oil on each pear then sprinkle spices. Roast at 350 degrees for about 5-8 minutes..when light brown on edges. Don't burn!
Vanilla Egg White Burrito:
While pears are roasting put together your egg white burrito, recipe here. Leave out cinnamon and bananas. When its almost fully cooked spread a even amount of white chocolate peanut butter in the middle. Pull out pears and slice in quarters, place on top of peanut butter. Fold each side and plate.
Cinnamon Toasted Tortilla:
Butter or coconut oil up one side of an tortilla and sprinkle on a bit of sugar and cinnamon. Place in pan and allow to heat up until liking. I choose to keep mine soft and chewy. Tear in pieces and plate. Top with white chocolate peanut butter, cinnamon and agave if you want it sweeter. Don't forget to eat any roasted pears left over...they are divine :)
Well I'm off to some more jewelry making, please don't forget to enter my giveaway (adding some more surprise gifts in it today), my personal clothing items are for sale, this lovely tunic is going up today and three more slots are open for reader's choice week! Have a great Monday.
