Walnut Pesto Spinach Omelet with a Whole Wheat Tortilla inspired by Anonymous.
With unpictured fruit medley of roasted pears, chocolate chips and juicy tangelos.

Good morning beauties! This reader asked to stay unknown but the flavors were anything other. My favorite thing ever besides garlic hummus on eggs is pesto..but honestly what doesn't go with eggs? There's a spectacular hotel I've visited that their brunch special is sun dried pesto omelets, they are actually made table side...so good. But the silly thing is that eventhough I adore them I've never tried to replicate a pesto. Of course I was trilled to make such a dish for breakfast when I was given the idea! All these ingredients are very simple and all can be obtained at your local Trader Joe's...in other words I see no reason why you shouldn't make this :) Just a side note, I love garlic so I went a bit heavy on it but if you can't handle the flavor in the morning just reduce the amount.

Walnut Basil Pesto:
2 c Fresh Basil Leaves
1/2 c Parmesan-Reggiano, grated
1/2 c EVOO
1/3 c Walnuts, roughly chopped
3 Garlic Cloves, minced
1 Squeeze of a Lemon
Salt & Pepper
In a food processor pulse together basil and walnuts. Then add garlic. Pulse until somewhat mixed, add evoo, cheese and lemon. Salt and pepper to taste. Pulse.

For the egg white omelet follow this recipe but do not scramble eggs. Allow it to set like a pancake then fill with spinach and chopped sun dried tomatoes , kinda like the breakfast burrito but savory. Fold each side into itself and add a dollop of pesto. Serve with your favorite bread or tortilla! Savor!

Besides making this lovely breakfast I've been packing lunches and cleaning like a mad lady! I'm living under insane stormy conditions so basically I'm going on day seven of staying in my place. Bored to say the least but I must admit I got all those annoying"little things" around my place done...laundry...organizing my closet...which is always nice. Maybe I'm not cut out for winter, I always get to January and start dreaming of sunshine and ruffled vintage bathing suits. But I refuse to let the grey skies get to me which is why baking sweets and the occasional call to my grandmother's always helps. What do you do to keep your spirits up during winter?

    ahh its rainy in Maggie-land? ;) its a bit sunny here! but to keep my spirits high in the lousy winter days i love to cuddle up in bed with a mag. and some music and just relax...i think getting crafty and creative in the winter is the best! bc we are often stuck home. but cleaning, ahh, i love to clean, sometimes hehe, just organizing, but laundry, no thanks! ;) lol

    this breakfast looks so delicious, love pesto, and walnut pesto sounds so delicious! i have made almond pesto's before so yummI!
    i need to organize my closet today too, but i dread the summer! :(... lol...i am so odd, i think i shall move to Iceland, jk...but love the winter, dont know why, i hate being so cold, yet i love the snow and how pretty NY looks in the winter...warm beverages and watching movies and coziness...okay any hoo, yay for readers choice bonus on your giveaway whahoo! ;] and that necklace is gorgg!!
