Like a Circus






Cocoa Bliss Buckwheat Granola with Hemp Milk and Banana Slices. Topped with Strawberry Shortcake Cashew Creme.

Morning morning! What could this colorful concoction be? Well knowing I wanted to make it a special chocolate covered week, more on that later, I brought out all the show stoppers. Being that Kaia Foods was more then generous sending over some goodies for me to enjoy. I've been dreaming of this mix granola since I opened the package a few days ago...the cocoa bliss buckwheat granola. By far the best granola I've ever had! Each cluster of buckwheat is rolled in pieces of dates and dusted with cocoa. Yeah it was that good!

With such a fun thing like chocolate I thought I would incorporated some of the extra creme from the raw strawberry shortcake I made the other day. Oh my goodness. It was like a circus of flavors. I think anytime chocolate, vanilla and strawberry is involved its instantly good memories. Remember those endless summers of Neapolitan ice cream sammies? This was that times ten. Yum!

Before I get to more talk of chocolate here's the recipe I've been promising for the raw strawberry short cake:
2 cups Strawberries

3 handfuls of Cashews and Almonds

4 Large Medjool Dates

2 tbsp Honey

1 tsp Sea Salt

1 tsp EVOO

1 tsp Vanilla Extract

Crust: In a blender mix nuts and salt until a powder. In a bowl hand mix together dates, 1 tbsp honey and nut powder until it forms dough. Or use food processor. Line a bowl with parchment paper and place dough inside. Form the crust and make sure to build up sides to keep the cake batter in. Much like a tart.
Cake: Blend together strawberries, honey, evoo, salt and vanilla until creamy. If you like it more crunky pulse instead. Pour inside crust and smooth out with a spoon. Freeze for 2 hours to set then unthaw in refrigerate before eating.

So sweet you'll keep going back for more! Speaking of sweet things..

your breakfast is by far the most beautiful bowl of granola ever "strawberry shortcake cashew cream" sounds divine! and that granola sounds equally amazing!

Maggie! that looks sensational! strawberry shortcake what an old time favorite! What did you use to make the cashew cream the same ingredients for the cake? It looks amazing along with the granola! I tried to make my own granola the other day but i must say i am not the baker haha, <33 Brooke

That shortcake recipe is astounding enough, but incorporated into that bliss full cold cereal/granola bowl...it's mercurial.
