Chewy Chocolate PB Granola Bars:
- 1 1/2 cups of oats
- 1/4 cup of shredded coconut flakes
- 1/4 cup raisins
- 1 tbsp ground flax seed
- 1/2 amber agave nectar

- 3 tbsp vanilla brown rice protein powder
- 1 tbsp cinnamon + pinch of nutmeg
- 2 tbsp coconut oil
- 1/2 cup peanut butter
- 1/4 cup chunks of homemade raw chocolate* (optional or add chocolate chips)

Mix together all dry ingredients then add peanut butter and coconut oil. Lastly mix in chocolate chunks or chips. On a parchment papered cookie sheet spread out dough in a large square. Freeze overnight then slice into bar shape or use a round cookie cuter for fun. Individually wrap for the perfect protein snack!
*Chocolate chips:
•1 Tablespoon coconut oil
•1/2 cup cocoa powder
•2 T agave nectar
•2 teaspoon vanilla
Mix together and roll out on a parchment papered cookie sheet. Freeze for 30 minutes then break in pieces.

These look absolutely delicous! Did you use coconut oil in it's solid form, or did you melt it first? I can't wait to try these!

ReplyDeleteJessica: In the winter I let the jar sit by the oven or stove to get soft but our weather here is so warm that it was already a bit mushy. I would probably warm it a bit but don't melt it or it will be too hard to work with!

My favorite kind of granola bar would have to be something with raisins(chewy) coconut and nutty/seedy!...like a ProBar...those are perfect, a bit of everything!!
