
Crust
- 2 cups of Almonds, finely blended
- 1/4 Agave Nectar or Maple Syrup
- 2 large Medjool Dates
- One pinch of sea salt
Blend all until crust dough forms. In a pie pan spread out evenly.
Filling
- 1 cup *Pumpkin Pie* Puree (pre spiced and sweetened)
- 1/4 cup Unsweetened Vanilla Hemp Milk
- 1 tsp Cinnamon
- 1/2 tsp Cloves
- 1/2 tsp Nutmeg
- Sprinkle of brown sugar
Combine in a food processor and pour into pie crust. Allow to chill in freezer for 2-3 hours then unthaw in fridge a few minutes before eating.
Top with some raw whipped cream, crushed walnuts and cinnamon sprinkles. Yum!

mmm...sounds (and looks!) so tasty! I wonder if you could make your own filling...maybe by just recreating it with canned pumpkin and the other ingredients in the pie filling...

Yeah I've made this pie twice and the first time I made it with mashed steamed pumpkin, spices, hemp milk and agave. That works well if you don't have a premade pumpkin pie can handy!
