Olive and red

Ready. Set. Go.... Those are pretty much my first thoughts once I hear my singing alarm go off before the sun rises. My once empty calender has been miraculously filled weeks in advanced. And although I might sound like I'm complaining...I could not be anymore content. But yesterday between shuffling papers I had a break to get back to one of my favorite past times. I never understand how I can go so long without baking..its such an relaxing art...







Seen here is two delicious vegan chocochip cookies, that I adapted my own recipe after Sweet Beet's, and a glorious green beauty smoothie just before being devoured. The cookies were rich and decedent enough that I had to make another batch...package in little blue Chinese take out boxes and I send my friends off with a few. They said they were fantastic, so I thought maybe you will like them too!

Simple. Delicious. Addicting. My take on the perfect vegan chocochip cookie:

1 cups earth balance evoo butter
1 cups organic cane sugar
1/2 cups organic brown sugar

Cream the room temperature butter with the sugars.

2 small mashed ripe bananas
1 splash of vanilla extract

Mix with the sugar/butter and set aside.

2.5 cups whole wheat flour
2.5 cups oats (blended to flour texture)
1/2 tsp sea salt
1 tsp baking powder
1 tsp baking soda
1 dark chocolate bar, chopped and blended until powder

Mix with wet ingredients then add chocolate powder. Put on foil covered cookie sheet with nonstick spray and play with various shapes. Bake at 375F for 6-8 minutes. Allow to cool for a minute before enjoying!

My summer plan - This weekend I saw the beauty in my friends. They embody the meaning of glowing inside and out. Seeing their true happiness reminded me of how much beauty I want to absorb as well. I mean who wouldn't want to? Something I found out about myself is that my smile is like a necklace of pearls. When I see someone light up when I smile at them it makes me realize how much one jester of kindness can mean to the people around you. Maybe your having a bad day or your feeling iffy about how your hair looks but if you just smile through it you might make someone feel like everything will be alright in their life as well. Tell me your thoughts on a kind jester- smile or wave. xoxo

  1. The cookies do look and sound great lady! I also love your snake ring sooo much! I think a smile often lightens most moods...I definitely have worked on doing it more this past year to ease situations.

I tried your french-toasted PB&J once a while back and it was one of the best dinners I ever had. My parents looked at me like I was crazy... they just didn't understand the melty PB amazingness.

  10. Smiling is something I can't help but doing. It's hard for someone to look at someone that's smiling at them and keep a serious face. It's infectious.. contagious.. wonderful.. and beautiful!

    Those cookies look so scrumptious and I swear I can smell them baking ;) It's 9:30 pm over here and I'm about to bake something as well. Then I read this post and now I am definitely getting my booty into the kitchen mwahaha!

    Love when a kind stranger smiles at me, or anyone! It really brightens me up on an iffy day! Its so true a kind jester can mean the world to someone, on a specific moment or day, who knows how you could effect someone with just one jester :)!

    Hi Maggie, greetings from Oakland! I've been following your blog for a few months now, and I must say I your blog is so refreshing! It's my go-to when I'm in front of the computer and I need something pretty to look at and nice to read. Anyway, I saw the pictures of the cookies included with the recipe and I just knew I had to make them!

    I have my last batch in the oven and they're absolutely delicious! I had to stop myself from eating the entire batch of batter.

    I substituted the butter with coconut oil and the brown sugar with agave, only because I didn't have them in my pantry.

    Anyway, thanks for your creativity and keep up the great work!!

  25. oh my goodness. i just finished baking these and they're sooo good! i gave some to my omni brother and cousin with some vanilla soy milk and heard them make the same praise and thanks to the cookie gods that i made. the banana makes them taste a bit like banana bread, which is heavenly. they're sooo soft but they don't fall apart! i think next time i'm going to do half chocolate chips and half raisins, because i love me some raisins in my cookies. by far this is the best vegan chocolate chip recipe. ever.
