Weekend Inspiration

The days around here have been slow and the sunsets have been golden. Spending my nights with plaid fleece blankets and sharing stories about driving my green jeep when I was thirteen. Big brown eyes listen intently while trekking through crunchy leaves to pick up a faded teapot for my friend's grandmother. A couple nights ago we had a pizza party of sorts, photos soon to come, but these were the hours leading up to the get together and the Saturday after. I always try to grasp any inspiration from the neighbors farmers before the weekend is over - it helps me through those dull kind of Wednesdays.

{Homemade Basil, Fig and Spinach Pizza}

Would you believe me if I said this was vegan and gluten free? My friends couldn't guess! My good friends from French Meadow Bakery sent me over some gluten free pizza dough just in time for the party. It saved me from just making an boring salad! It came in pizza pie sheets pre-rolled out and ready for toppings. I choose a few eyebrow raising ingredients around my traditionalist pepperoni and mozzarella peers but I like new things, what can I say? Once it came out from the oven I was eager to try it - very thin, chewy and delicious. There was not much of a yeast bread flavor but I'm a thin crust pizza kinda person so it was what I prefer anyways. Overall the pizza dough is the perfect canvas to any topping and that's what a dough should always be!

Saturday rolled around and I spent the day in warm thick knits, buying wicker fisherman baskets and breathing in the crisp air.

I am pretty sure that I will make it through this Wednesday but plainly stated...I am looking forward to next weekend.

How did you spend your last weekend?
