My Raw Lemon Frosting Cookies

Sun kissed dreams of trips to Asia. Brewing ginger kombucha. Thick stripped socks. Vintage brown beat up coach bag. Painting mugs. Fresh roses from a friend's garden. Messy buns. With sweet daydreams about spending the weekend painting plates and braiding pony manes....I can't wait to conclude this fantastic week with rainy weather in the company of some of my favorite girls!


It's a natural thing for me to bring something sweet, yummy and a bit healthier than a chocolate chip cookie to gatherings...almost expected, highly anticipated! Today I had this mad fascination with fresh lemon, lemon juice, lemon zest, lemon anything..it went in my tea, in my smoothie and in my pasta. So along those lines I found myself thinking..who doesn't love lemon frosting? Gimme! The perfect treat for the perfect weekend.



My Raw Lemon Frosting Cookies

An wonderful raw treat with bursts of zesty lemon, creamy cashews and vanilla bean. Roll in chia seeds for a crunch or with a bit more lemon zest for a punch. It's glorious cookie that is sure to stand as an dessert all on its own!

Makes 15-20 balls.

1 cup Raw Cashews

2 tbsp Extra Virgin Coconut Oil

11 Medjool Dates

1/2 tsp Vanilla Extract

1/2 Lemon, juiced

Zest from 1 Lemon

1 tbsp Chia Seed, optional


In a food processor, pulse cashews until desired chopped consistency. Place in bowl. Pit dates and add into food processor, along with vanilla, lemon juice, zest and coconut oil. Pulse until smooth.


Spoon date mixture into bowl with cashews. Use hands to mix until dough forms.


Roll dough into balls* or roll out into shapes on an parchment paper lined cookie sheet. Place cookie sheet into freezer for 1 hour. *optional-roll in chia seeds before freezing.


You really can get creative with these cookies...throw them into your morning smoothie for a creamy treat or crumble in your oatmeal! I'm planning on wrapping a few into various little colorful baggies and tie each one with some pale yellow string. Theres so many fun things you can do with this recipe. Yes, I am an sucker for lemon :)

    My mom brews Kombucha and she makes it with organic grapes and the kombucha comes out SO incredibly effervescent and fizzy, it's even better than the ones in the stores. ginger is really good too i bet.
